topping essentials: yummy sauerkraut with a twist
I love this sauerkraut… it has flavor notes that are both sweet and sour. It is easy to put together, and is better the day after it is made. This is my go to sauerkraut for hot dogs, and when you incorporate it with some sliced sausages… just heaven. As a matter of fact, the photo I am using is for my sauerkraut and sausages, and I will post that recipe at a later time. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons sweet butter, unsalted
- 1/2 large yellow onion, sliced into thin half moons
- 1 teaspoon caraway seeds
- 15 ounces sauerkraut, rinsed, and drained
- 1/4 cup dark beer
- 3 tablespoons pickle relish, sweet variety
- 2 tablespoons coconut sugar
- 2 teaspoons dry mustard

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Add the butter to a pan over medium-low heat.

Step 4When the foaming subsides, add the sliced onions, and the caraway seeds.

Step 5Slowly cook until the onions soften, and begin to lightly brown, about 20 minutes.

Step 6Add the remainder of the ingredients.

Step 7Slowly simmer until the liquid is reduced by half, about 10 – 12 minutes.

Step 8Chef’s Note: I make my own base sauerkraut; however, store-bought works quite well. My recommendation is not to use sauerkraut a can, or glass jar. But, choose sauerkraut that is in the refrigerated section.

Step 9Remove from the heat, allow to cool, place in a glass jar, with a tight-fitting lid, and place into the refrigerator until ready to use.

Step 10Chef’s Note: This recipe should last 7 – 10 days if kept cool, and sealed.

Step 12Use on a good hot dog, as a side to another protein, or cook with some sliced sausages. Enjoy.
