- 2 - yellow summer squash
- 2 - zucchini
- 8 - red potatoes
- 2 - onion
- 4 - tomato
- 1/8 cup olive oil
- 2-3 sprigs mint
- pinch salt
- pinch pepper
How To Make taste of summer

Step 1thinly slice all the vegies

Step 2layer one at a time of each . squash, zucchini, potato, onion , tomato and mint... I usually end up with 2 layers of each depending on the dish

Step 3pour oil over and bake at 350 for an hour or until potato is soft... enjoy!
