My mother used to make this side dish and we all loved it. I remember anybody else she served it to really loved it also. The difference between the way she made it and the way I make it, is that she used to sauté the carrots in vegetable oil before cooking them with sugar and lime juice. One day I decided to make this side dish, without sautéing them in oil, and found out that it is just as delicious, it is fat free, and takes less time to prepare.

Ingredients

  • 1and 1/2 pounds carrots
  • 3/4 cup sugar
  • 2 tablespoons lime juice
  • 1and1/4 cup hot water

How To Make sweet and sour carrots as side dish

  • Step 1
    pill carrots and cut both ends
  • Step 2
    cut carrots in 3rd and then in half, then rinse.
  • Step 3
    Add the carrots, sugar and water in a 2 quart pan. Bring to boil on the stove top, reduce heat to medium and cook uncovered for about 10 minutes.Don't let it get soft. Add lime juice and cook until only 2 or 3 tablespoons of water left. Serve as side dish with meat, fish or chicken. easy and delicious.
