Old school classic southern summer squash recipe. This is one you see at every southern covered dish. Easy yummy it's a pleaser

Ingredients

  • 4 cups sliced yellow squash
  • 1 sleeve ritz crackers crushed
  • 1 onion
  • 1 cup cheddar cheese grated
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 2-3 cloves garlic
  • salt and pepper
  • 3 tablespoons butter, melted

How To Make southern squash casserole

  • Step 1
    Preheat oven 350°
  • Step 2
    Chop onions and garlic place in skillet with a bit of oil or butter
  • Step 3
    Add sliced yellow squash and cook until squash is slightly tender .. ( I usually will cook the cassarole in the one case iron skillet but you can put it in a casserole dish after cooking squash for prettier presentation)
  • Step 4
    If using a casserole dish pour squash mix in or as I do just mix sour cream. mayonnaise. Cheese. Salt. Pepper. Into skillet with cooked squash mix
  • Step 5
    Place cracker crumbs in bowl and pour melted butter over and mix well
  • Step 6
    Sprinkle buttered crumbs on Top of casserole and bake 20- 25 minutes or until bubbly and browned. Allow to rest about 10 minutes.
