side essentials: yummy cauliflower taters
First off, if you look at the ingredients, I am not making these taters to be some health food, I created it to give people a different approach to a potato-like side dish. Well, much to my surprise, I found out that mashed cauliflower really does a brilliant job of replacing mashed potatoes. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 12 ounces cauliflower, just the heads
- 1/4 cup chicken stock, or water
- 4 tablespoons sweet butter, unsalted, divided
- 1/4 cup sour cream
- 3 tablespoons half & half
- 1/4 cup parmesan romano cheese, freshly grated
- 2 cloves baked garlic, smashed
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Take the cauliflower heads, and place into a food processor, fitted with an S-Blade. Then give them a few 1-second pulses, until the mixture resembles rice.

Step 4Add the riced cauliflower, chicken stock (or water), two tablespoons of the butter, and a bit of salt and pepper, to a saucepan over medium-low heat.

Step 5Chef's Tip: I you elect to use raw, rather than baked, garlic. Then smash it with the flat end of a kitchen knife and add it to the saucepan to cook. If it is baked garlic, then add it at step 7, along with the remainder of the ingredients.

Step 6Cook over low heat until the cauliflower begins to soften, about 15 – 20 minutes.

Step 7Add the remainder of the ingredients, and stir to combine. Do not forget the other 2 tablespoons of butter.

Step 8Return the mixture to the food processor, and process at high speed until the mixture is smooth, and resembles mash potatoes.

Step 10Serve with your favorite protein, or just eat them on their own. I usually add a pat of butter, and a sprinkle of salt and pepper. Enjoy.
