side essentials: twice-baked sweet potato heaven
This is a really fun way to bake up some fantastic sweet potatoes. They can be served at your next football party as a snack, or you could have them as a side at your next dinner party. I personally serve a variation of this as one of my sides at Thanksgiving. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE POTATO
- 1 large sweet potato
- 2 tablespoons plain greek yogurt, or sour cream
- 1/8 teaspoon pumpkin pie spice
- 1 tablespoon fresh clover honey
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- THE TOPPING
- 1/4 cup chopped walnuts
- 1 tablespoon sweet butter, unsalted, melted
- 1 tablespoon fresh clover honey
- ADDITIONAL ITEMS
- - olive oil, for brushing the skins

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3THE POTATO

Step 4Add a rack to the middle position, and preheat the oven to 400f (205c).

Step 5Wash the sweet potato, and use a paring knife or fork to prick the skin.

Step 6Chef’s Note: Pricking the skin of a potato will allow steam to escape; keeping the potato from splitting open during the baking process.

Step 7Brush with a bit of olive oil, and lightly sprinkle with salt.

Step 8Place the potato on a parchment-lined baking sheet, and place in the oven until cooked through, about 20 – 35 minutes; depending on how big your potatoes are.

Step 9Chef’s Tip: A potato is cooked through, when a fork or paring knife inserted into the potato goes in without resistance.

Step 10Allow to cool, and then, using a spoon, carefully remove the insides, while leaving the skins intact.

Step 11Mix the sweet potato with the remainder of the ingredients, and add back into the potato skins.

Step 12THE TOPPING

Step 13Add the topping ingredients together.

Step 14Divide between the filled potato skins.

Step 15Return to the preheated oven, and bake for an addition 12 – 15 minutes, or until the tops begin to brown.
