- PLAN/PURCHASE
- 1 pound fresh carrots
- 1/2 cup water
- 2 tablespoons sweet butter, unsalted
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- - caraway seeds, to taste
- OPTIONAL ITEMS
- - freshly chopped flat-leaf parsley, for garnish

Step 2Gather your Ingredients (mise en place).

Step 3Wash and peel the carrots, and cut on the bias into 1/4 inch (.6cm).

Step 4Chef’s Note: If you thoroughly wash the carrots, you do not need to peel them. That makes the carrots more rustic.

Step 5Place the carrots into a pan, and add about 1/2 cup water.

Step 6Bring the pan to a boil over medium-high heat.

Step 7Reduce the heat to medium-low, cover the pan, and cook for 6 – 7 minutes.

Step 8Remove the cover, and add the butter.

Step 9Continue to stir until the remainder of the water evaporates, about 1 – 2 minutes.

Step 10Remove from heat and season with some salt, pepper, and caraway seeds.

Step 11PLATE/PRESENT

Step 12Sprinkle on some chopped parsley (if using), and serve as a side with your favorite foods. Enjoy.
