- 1 medium head of napa cabbage
- olive oil, as needed
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste

- crumbled cheese, or parmesan
- balsamic vinegar

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3Place a rack in the middle position, and preheat the oven to 400f (205c)

Step 4Cut the cabbage into 1/2-inch (1.2cm), and place on a parchment-lined baking sheet.

Step 5Drizzle with a bit of olive oil, about a teaspoon.

Step 6Sprinkle on a bit of salt and pepper, to taste.

Step 7Place into the preheated oven, and bake until the edges begin to brown, but not blacken, about 25 – 30 minutes.

Step 8Remove from the oven, and allow to rest for 2 – 3 minutes.

Step 9Chef’s Tip: The crispy bits are the absolute best, so try to get as much crispy cabbage as you can, without burning it.

Step 11Place on the plate whole, or make it rustic. Drizzle on a bit of vinegar, toss on a bit of cheese (I am thinking feta). Enjoy.
