1 smalleggplant (normal small, not the mini)
1 largebeaten egg
1 cfinely crushed cheez-its crackers, regular of spicy
·vegetable oil for frying
How to Make Shoestring Eggplant
- Peel eggplant and slice 1/2 inch thick.
Cut slices in 1/2-inch strips.
Soak in salted ice water for 30 minutes; dry with paper towels.
Roll in cornstarch, dip in egg mixed with water; then roll in cracker crumbs. Shallow fry in hot oil to brown about 40 seconds.
Drain on paper towels.
Sprinkle with salt , cinnamon sugar or drizzle with honey, if desired
