savory roasted beets with sweet onions
I grew up eating beets from a can with lots of sugar added. I do enjoy beets, but having roasted so many other veggies, I decided to create a roasted beet recipe. I am so glad I did! This is far better. Simple and easy, the sweetness of both the beets and onions come right out without any sugar. The bonus is it is much healthier.

Ingredients
- 5 or 6 - fresh beets, peeled or not
- 1 medium sweet onion
- 1/4 cup oil (olive, avocado or other type)
- - salt and pepper to taste - optional
How To Make savory roasted beets with sweet onions

Step 1Cut fresh beets into fairly large chunks. Size of beet matters. If small halve or quarter. If larger, cut into more pieces. Place them in a large bowl.

Step 2Cut onion into medium size chunks and add to the beets.

Step 3Pour the oil and salt and pepper over vegetables. Mix well.

Step 4Pour all onto a parchment lined sheet or baking pan. Note: I like to put foil on bottom and then top with the parchment for easier clean up.)

Step 5Bake in preheated 350 degree oven for about 30 to 40 minutes depending on size of the pieces. Turn over after about 15 minutes. Check for doneness by poking with a fork.
