Cauliflower is one of the best vegetables because it absorbs whatever flavor you put on it. This recipe is delightful because it highlights the subtle taste of cauliflower and is an excellent side dish for a main meal but won't steal the show.

Ingredients

  • 1 large head of cauliflower
  • 1 teaspoon sea salt flakes
  • 1 teaspoon garlic granuals
  • 1/4 teaspoon ground cayenne pepper
  • 2 tablespoons olive oil (+ additional to prepare pan)

How To Make roasted rough chopped cauliflower

  • Step 1
    Preheat oven to 425.
  • Step 2
    Using a paper towel or your hand, spread olive oil all around a large cast iron pan, also oil the sides of the pan.
  • Step 3
    Combine salt, garlic, and pepper in a small bowl, set aside.
  • Step 4
    Remove greens from cauliflower head and discard. Rough chop cauliflower and place in prepared cast iron pan. Pour olive oil on hands and rub on cauliflower. Sprinkle seasoning over the top and put in oven for 30-35 minutes. I tend to stir it after 15 minutes. You will know it's done when there are some brown spots on the cauliflower and you can easily insert the tongs of a fork.
