quick zucchini pepper saute'

Created this for dinner from ingredients I had on hand at the time. My husband and I really enjoyed it. I loved that it was quick and easy, as well as healthy, and colorful on the plate.

Ingredients

  • 2 medium zucchinis, sliced
  • 2 medium yellow squash, sliced
  • 1 medium red bell pepper, cut into strips, and then in thirds
  • 1 medium onion, sliced
  • 1 bunch green onions, chopped
  • 2 - shallots, chopped
  • 2 cloves garlic, minced
  • 1 small jalapeno, seeded chopped fine
  • 3/4 teaspoon italian seasoning
  • 1/4-1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely shredded cheese, your choice(optional)
  • 1 1/2 tablespoons olive oil

How To Make quick zucchini pepper saute'

  • Step 1
    In a large skillet add olive oil, and heat over medium heat, add all sliced, chopped and minced veggies, and stir frequently to prevent sticking, and cook till almost transparent, about 7 to 9 minutes add salt, pepper and italian seasoning, stir to mix, and sprinkle with shredded cheese, and cover to allow cheese to melt. Serve while still hot.
