Created this for dinner from ingredients I had on hand at the time. My husband and I really enjoyed it. I loved that it was quick and easy, as well as healthy, and colorful on the plate.

Ingredients

2 medium
zucchinis, sliced
2 medium
yellow squash, sliced
1 medium
red bell pepper, cut into strips, and then in thirds
1 medium
onion, sliced
1 bunch
green onions, chopped
2
shallots, chopped
2 clove
garlic, minced
1 small
jalapeno, seeded chopped fine
3/4 tsp
italian seasoning
1/4-1/2 tsp
salt
1/4 tsp
black pepper
1/4 c
finely shredded cheese, your choice(optional)
1 1/2 Tbsp
olive oil

Step-By-Step

1In a large skillet add olive oil, and heat over medium heat, add all sliced, chopped and minced veggies, and stir frequently to prevent sticking, and cook till almost transparent, about 7 to 9 minutes add salt, pepper and italian seasoning, stir to mix, and sprinkle with shredded cheese, and cover to allow cheese to melt. Serve while still hot.
