After having made & posted my Dinner Guest Macaroni & Cheese, I thought I would make something a little lighter on the calories. This is the recipe I came up with, & I served it with the Macaroni & Cheese. I cooked the veggies a bit al dente if that is what you call veggies that are cooked only till tender crisp, where they still retain their color & shape. They were very tasty , & made a colorful addition to our dinner plate. Can't go wrong using fresh tasty vegetables of your choice. You could add a bit of crumbled bacon if desired, but that would defeat the purpose of healthy.

Ingredients For quick cook mixed veggies

  • 1 sm
    head cabbage with outer leaves
  • 1 lb
    baby carrots (cooked seperately)
  • 1 lb
    broccoli florets
  • 2 md
    onions, sliced thick
  • 1 bunch
    green onions, chopped
  • 2 md
    red bell peppers, cut into thick strips
  • 1 1/2 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 2 tsp
    steak seasoning
  • 1 Tbsp
    italian seasoning
  • 3-4 clove
    garlic, minced

How To Make quick cook mixed veggies

    Core and wash cabbage and cut into shreds or desired thickness as desired. Roll leaves together then cut with sharp knife into thin strips. Peel and slice onions, and add with the cabbage.

    Add the butter and olive oil to a large 16 inch skillet, and melt over low heat then add the cabbage and onions & minced garlic, Cover with lid cook till they begin to change color to a bright green. About 10 minutes.

    Boil baby carrots in a separate pot till tender, about 8 to 10 minutes then drain and set aside till needed. I chose to cook the carrots separately so they would be tender and not hard, but you can add to the skillet if desired.

    Then add the broccoli flowerets to cabbage along with the red bell pepper strips, chopped green onions and the spices. Stir to blend together. Cover and continue to cook. Stirring as needed to prevent sticking.

    Add the baby carrots then stir to mix together, and continue to cook until vegetables are cooked to desired tenderness. Remove from heat and serve as desired. A great colorful & tasty side addition to accompany any meal idea.
