Potato and Winter Squash Mash

2 lbpotatoes, peeled, quartered
1-1/2 lbwinter squash, peeled, cubed
1 tspsalt, or to taste
1/2 tspwhite pepper, or to taste
1/2 cbutter, melted
2 clovegarlic, chopped
·chopped parsley for garnish
How to Make Potato and Winter Squash Mash
- Put potatoes and winter squash in a pot and cover with salted water 1 inch above vegetables. Bring to a boil and simmer about 30 minutes or until vegetables are tender. Drain.
- Remove from heat. Add garlic, salt. pepper, and butter. Mash with potato masher until smooth and blended well.
- Return pot to low heat and use a hand mixer while gradually adding in the half-and-half. Continue mixing until vegetables are fluffy and heated through.
- Move vegetables into a serving dish and garnish with chopped parsley. Enjoy!
