potato and winter squash mash
Last summer I grew Lakota Squash and wound up with 35 basketball size squashes. I have worked on several recipes to use this delicious squash. In this recipe I combined squash and potatoes for a delicious side dish. You can use any winter squash in this recipe.

Ingredients
- 2 pounds potatoes, peeled, quartered
- 1-1/2 pound winter squash, peeled, cubed
- 1 teaspoon salt, or to taste
- 1/2 teaspoon white pepper, or to taste
- 1/2 cup butter, melted
- 2 cloves garlic, chopped
- 1/4 cup half-and-half
- - chopped parsley for garnish
How To Make potato and winter squash mash

Step 1Put potatoes and winter squash in a pot and cover with salted water 1 inch above vegetables. Bring to a boil and simmer about 30 minutes or until vegetables are tender. Drain.

Step 2Remove from heat. Add garlic, salt. pepper, and butter. Mash with potato masher until smooth and blended well.

Step 3Return pot to low heat and use a hand mixer while gradually adding in the half-and-half. Continue mixing until vegetables are fluffy and heated through.

Step 4Move vegetables into a serving dish and garnish with chopped parsley. Enjoy!
