Peas with Mint

Fresh mint in the garden, and peas are coming into season. Here's a way to dress them up.

  • 1/4 c
    chopped celery
  • 1/2 c
    chopped carrots
  • 1 Tbsp
  • 1 Tbsp
    olive oil
  • 1/4 c
  • 1-2 Tbsp
    chopped fresh mint leaves
  • 2 c
    green peas, fresh or frozen
  • ·
    just a pinch of salt, to taste

How to Make Peas with Mint


  1. Sauté celery and carrots in the butter and olive oil until celery softens. Add the water and mint leaves and simmer about 10 minutes until carrots are cooked.
  2. Add peas, cover, and steam over low heat until peas are done to your liking. Add salt to taste. Stir well before serving.
