My friend put this refreshing salad together for company last week. She sent me a little to taste.. It was so good.. I was glad she sent the recipe along with it. I do have good neighbors! So.here it is for you to enjoy...

Ingredients

  • 1 tablespoon extra light olive oil or vegatable oil
  • 1 teaspoon finely grated lime peel
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1/2 teaspoon finely chopped jalapeno pepper
  • 2 large oranges
  • 2 cups peeled and diced jicama
  • 2 tablespoons chopped cilantro or parsley leaves

How To Make orange-jicama salad with a jalapeno touch

    Step 1
    In a small bowl blend oil, lime peel, juice, brown sugar and jalapeno pepper. Peel and section oranges. Add peeled and diced jicama. Add dressing mixture, toss to coat. Cover and chill for 30 minutes to 1 hour before serving. Nancy 7/3/12
