I was making an Orange juice chicken dish for a friend and her partner one night. For sides, I steamed some rice and thought that I'd cook some carrots - After mixing the orange juice and herbs for the chicken, I thought... Carrots and Orange juice would be great paired together and would go nice with the chicken. So this is the recipe I came up with. 4 ingredients, very simple, very tasty dish. Even my friends partner (who claimed to hate carrots) thought this dish was very tasty and went back for seconds.

Ingredients

  • 1 small
    bag of baby carrots, or 4-6 medium carrots washed, and cut into 2 inch pieces
  • 1 c
    orange juice, or juice from 2 oranges. (should be just enough juice to cover the carrots)
  • 1 Tbsp
    butter
  • 1 Tbsp
    dried tarragon

How to Make Orange Glazed Carrots

Step-by-Step

  1. in a small saucepan, heat orange juice and butter together till simmering.
  2. add carrots and tarragon. cover and simmer for about 10 - 15 minutes , till carrots are just crisp tender and the sauce is reduced enough to coat them.
