my grandma logan's & james's fried corn

This is my Grandma Logan's Fried Corn recipe as I remember it. My brother-in-law James use to make the best fried corn, also. I dedicate this recipe to both of them. This is "Healthy for The Soul" country cooking. This is not a "DIET" recipe for the health conscious. This is simply Good Frickin' Eatin'!!! Happy Cooking! sw:)

Ingredients

  • 6-8 - corn on the cob
  • 8-10 slices fat back meat, rinsed & soaked for 15 minutes or so
  • 1 stick butter, unsalted
  • 1 tablespoon black pepper
  • 1 pinch salt (optional)

How To Make my grandma logan's & james's fried corn

  • Step 1
    slice corn off the cobb. scrape milk from cobb...if you have a lil' silk left on the cobb, it's quite OK!!!
  • Step 2
    fry fat back meat until crispy. remove meat
  • Step 3
    add corn, meat of a couple pieces of fat back, salt and pepper to pan. simmer for 8-10 minutes. remove and add butter. allow butter to melt
  • Step 4
    bowl up, spoon up and enjoy!
