mother's hominy bake

Updated on Jul 31, 2015

I have always been crazy about hominy and I have always been surprised by how many of my fellow Northerners have never heard of it. I grew up with it, even though none of my family is from the South. Any time I can prepare hominy in other ways besides just "out of the can," is a good time. Enjoy! Recipe: Cookscountry.com 07-31-15

Ingredients

  • 2 tablespoons olive oil
  • 1 - onion, minced
  • 1 can (4 oz.) chopped green chiles, drained
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 2 cans (15 oz.ea.) white hominy, drained and rinsed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

How To Make mother's hominy bake

  • Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.
  • Step 2
Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.
  • Step 3
Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.
  • Step 4
Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.
  • Step 5
Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350º oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
