mother's hominy bake
I have always been crazy about hominy and I have always been surprised by how many of my fellow Northerners have never heard of it. I grew up with it, even though none of my family is from the South. Ingredients
- 2 tablespoons olive oil
- 1 - onion, minced
- 1 can (4 oz.) chopped green chiles, drained
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 2 cans (15 oz.ea.) white hominy, drained and rinsed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup sour cream
- 1 cup shredded cheddar cheese
How To Make mother's hominy bake

Step 1Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.

Step 2Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.

Step 3Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.

Step 4Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.

Step 5Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350º oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
