Ingredients
- 1/4 cup fresh lime juice
- 2 tablespoons firmly packed light brown sugar
- 3 cups chopped seeded watermelon
- 1 cup chopped seeded cantaloupe
- 1 cup peeled, chopped seedless cucumber
- 1/2 cup minced red onion
- 1/4 cup minced red bell pepper
- 1/4 cup chopped fresh mint
- 2 tablespoons finely chopped crystallized ginger
- 1 to 2 tablespoons minced seeded jalapeno pepper, or to taste
- - salt and pepper, to taste
How To Make melon salsa

Step 1Whisk together the lime juice and sugar until sugar dissolves. Add remaining ingredients and gently toss to combine.

Step 2Season lightly with salt and pepper. This can be prepared up to two hours in advance. Strain before serving.
