Mashed cauliflower is a comforting treat, similar to mashed potatoes, but using the healthy cruciferous veggie. This is a wonderful way to reintroduce cauliflower when on the Specific Carbohydrate Diet, as the cauliflower is cooked very soft.

Ingredients
- 1 head cauliflower
- 1 cup scd yogurt made with half & half
- 1 teaspoon granulated garlic (penzeys or mccormick brand are scd compliant)
- 1/4 teaspoon granulated onion (penzeys or mccormick brand are scd compliant)
- 3/4 teaspoon salt (anywhere between 1/2-1 tsp. works, according to taste preference)
- 1/4 teaspoon black pepper
How To Make mashed cauliflower (instant pot, scd compliant)

Step 1Clean & cut head of cauliflower into chunks.

Step 2Place trivet rack in Instant Pot. Place a steamer basket or fine mesh metal basket on top. Pour in 2 cups of water.

Step 3Place cauliflower chunks in the basket. Close lid, set steam valve to sealing. Pressure cook 4 minutes. Manual steam release. Remove lid & let sit a few minutes. Remove steamer basket with cauliflower & rack from Instant Pot. Discard water in the bottom of the pot.

Step 4Return cauliflower to pot. Add about 1 cup of SCD yogurt made with Half & Half, and seasonings. Mash with a potato masher. (Should mash easily.) Enjoy!
