How to Make Lima Beans with Pine Nuts
- Heat olive oil in a wide, heavy skillet over high heat until hot. Add lima beans and shake the skillet to distribute them over the bottom of the pan.
- As the limas heat, mince pine nuts very fine. When the limas have cooked long enough to brown a little, add pine nuts and salt and stir.
- Lower heat to medium and continue to cook, stirring occasionally, until limas are cooked through and the pine nuts smell toasty, about five or 10 minutes.
- Limas will be firm; if you like them very soft, add water during the final cooking.
