Ingredients For green tomato bread

  • 1/2 c
    walnuts
  • 2 lg
    eggs
  • 1 c
    granulated sugar
  • 1/2 c
    vegetable oil
  • 2 c
    all purpose flour
  • 3/4 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    baking powder
  • 1 c
    grated green tomato
  • 1/2 c
    golden raisins
  • 1 tsp
    vanilla extract

How To Make green tomato bread

  • 1
    Beat eggs, then gradually beat in sugar, then oil. Combine dry ingredients; add to first mixture alternately with the green tomato's. Stir in nuts, raisins and vanilla. Spray a 8 or 9-inch loaf pan with non-stick spray and pour mixture into pan. Bake on lowest rack at 350^ for 55 minutes or until test with toothpick is done. Let stand about 10 minutes, remove and cool on wire rack. This moist bread keeps well and freezes great.
