Keto Friendly/Low Carb Smashed Cauliflower
**Feel free to add more cream cheese and/or parmesan cheese if you need it thicker. Just depends on size of cauliflower head**
1 largehead of cauliflower
1/2 cgrated parmesan cheese
4 ozfull fat cream cheese
1 Tbspchives (fresh or dried)
1 tspgarlic powder (or to taste)
1 tsphimilayan sea salt (or to taste)
1/2 tsppepper (or to taste)
How to Make Keto Friendly/Low Carb Smashed Cauliflower
- Break up your head of cauliflower into large chunks and cook in a large pot of boiling water until tender. Then drain the cauliflower and place back into the pot and turn burner off. DO NOT add any milk or other liquids because the water absorbed in the cauliflower will be all the liquid you need. Then mash the cauliflower with an immersion blender or a potato masher while its still in the pot until there are no chunks. You could also puree the cooked cauliflower in a blender or food processer. I use a hand held immersion blender because it gets the cauliflower nice and smooth (as pictured), but you can just use what you have on hand!
- After the cauliflower is mashed and back on the stove top pan, turn the burner onto "low heat" and add 1/2 block (4 oz) cream cheese and stir until melted. Then add 1/2 cup of grated parmesan, chives, and spices.
- After everything is all mixed together, simply add a dollop of butter and it's ready to serve!! My family thinks it tastes better than mashed potatoes!
