  • (1) 12oz pkg
    frozen squash, thawed (your choice)
  • 3 c
    all-purpose flour
  • 2 c
    sugar or splenda
  • 2 tsp
    baking powder
  • 2
    baking soda
  • 2 tsp
    ground cinnamon
  • 3
  • 1 c
    vegetable oil ( i used olive oil )

How to Make Harvest Cake


  1. Preheat oven to 350 degrees F. Coat an 8x8 inch baking dish with cooking spray. In a large bowl, mix together all ingredients. Pour into prepared baking dish. Bake about 55 minutes, or until a wooden toothpick inserted in center comes out clean. Make this a little extra special with a sprinkle of powdered sugar.
