grilled asparagus, zucchini and hamlouni side dish

Crunchy fresh asparagus and zucchini paired with haloumi cheese topped with lemon juice, olive oil and dukkah - a delicious light side dish. Perfect served along side grilled meats or roast chicken. I've made this adding a large handful of green beans and cooking as per the other veggies - delicious! Adapted from WW Australia.

Ingredients For grilled asparagus, zucchini and hamlouni side dish

  • 6 smallish zucchini, cut into quarters lengthways
  • 2 bunches of asparagus
  • 1 large lemon, sliced in half
  • 180g (6.5 oz) packet of haloumi cheese, sliced
  • 3 tsp of your favourite dukkah (i like one with almonds and middle-eastern herbs)
  • 1 tablespoon olive oil
  • chopped chives or parsley as a garnish
  • oil spray for grilling

How To Make grilled asparagus, zucchini and hamlouni side dish

    Heating a grill plate over a medium-high heat, lightly spray the veggies with oil spray.

    Cook the veggies on the heated grill plate, turning every now and then to create char marks (about 3 minutes in total). The veggies should be not overly soft. Place veggies on a serving plate.

    Chop the lemon in half and pop on the grill and grill for 1 minute. Pour half the lemon juice over the veggies. Spray the haloumi with oil and cook each side for 2 minutes.

    Top the veggies with the haloumi and finish with the remaining lemon juice, a drizzle of oil and sprinkling the dukkah over the top and garnishing as you wish.

    Serve warm.
