This is a nice rice and vegetable casserole.

Ingredients

  • 2 cups cooked rice
  • 3 small zucchini, sliced thin
  • 2 cans (4 oz) chopped green chiles
  • 12 ounces grated jack cheese
  • 1 large tomato, sliced thin
  • 1/4 cup chopped green pepper
  • 1/4 cup green onion, chopped
  • - salt and pepper, to taste
  • 2 teaspoons oregano
  • 1 teaspoon garlic salt
  • 2 cups sour cream
  • 2 tablespoons chopped parsley

How To Make green rice

  • Step 1
    Steam zucchini to crisp-tender. Set aside.
  • Step 2
    Butter a 3-quart casserole. Put rice in and cover with chilies. Sprinkle half of the cheese on chilies. Top cheese with zucchini slices and tomatoes.
  • Step 3
    Combine sour cream, oregano, garlic salt, green pepper, and green onion. Spoon evenly over tomato layer.
  • Step 4
    Cover with remaining cheese. Bake 40-50 minutes at 350°. Sprinkle with parsley and serve.
