Ingredients
- 2 cups cooked rice
- 3 small zucchini, sliced thin
- 2 cans (4 oz) chopped green chiles
- 12 ounces grated jack cheese
- 1 large tomato, sliced thin
- 1/4 cup chopped green pepper
- 1/4 cup green onion, chopped
- - salt and pepper, to taste
- 2 teaspoons oregano
- 1 teaspoon garlic salt
- 2 cups sour cream
- 2 tablespoons chopped parsley
How To Make green rice

Step 1Steam zucchini to crisp-tender. Set aside.

Step 2Butter a 3-quart casserole. Put rice in and cover with chilies. Sprinkle half of the cheese on chilies. Top cheese with zucchini slices and tomatoes.

Step 3Combine sour cream, oregano, garlic salt, green pepper, and green onion. Spoon evenly over tomato layer.

Step 4Cover with remaining cheese. Bake 40-50 minutes at 350°. Sprinkle with parsley and serve.
