Ingredients

2 c
cooked rice
3 small
zucchini, sliced thin
2 can(s)
(4 oz) chopped green chiles
12 oz
grated jack cheese
1 large
tomato, sliced thin
1/4 c
chopped green pepper
1/4 c
green onion, chopped
salt and pepper, to taste
2 tsp
oregano
1 tsp
garlic salt
2 c
sour cream
2 Tbsp
chopped parsley

How to Make Green Rice

Step-by-Step

  • 1Steam zucchini to crisp-tender. Set aside.
  • 2Butter a 3-quart casserole. Put rice in and cover with chilies. Sprinkle half of the cheese on chilies. Top cheese with zucchini slices and tomatoes.
  • 3Combine sour cream, oregano, garlic salt, green pepper, and green onion. Spoon evenly over tomato layer.
  • 4Cover with remaining cheese. Bake 40-50 minutes at 350°. Sprinkle with parsley and serve.
