I love all kinds of Greek food, so I figured I would make a pizza w/ some of the ingredients and it came out great!!

Ingredients

  • 1 c
    peeled, chopped eggplant
  • 1 Tbsp
    garlic-flavored olive oil
  • 1 c
    fire-roasted diced tomatoes, like ro-tel
  • 1 tsp
    greek seasoning blend
  • 1
    15 oz bag fresh refrigerated pizza dough from your market
  • 1/4 c
    prepared plain hummus
  • 7 slice
    smoked provolone cheese
  • 1 c
    cherry tomatoes, halved
  • 1/2 c
    pitted, oil-cured olives sliced, i get them from the deli

How to Make Greek supreme pizza

Step-by-Step

  1. Heat oven to 425. Spray a lg baking sheet w/ olive oil cooking spray. In saucepan, over medium heat, cook eggplant in oil for 4 min, or until tender.
  2. In food processor, puree eggplant, tomatoes, and greek seasoning. In saucepan, bring eggplant mix to a simmer, let cook 15 mins.
  3. Shape pizza dough into a 12" round. Place dough on baking sheet. Top w/ hummus, eggplant mix, slices of cheese, tomatoes and olives. Bake 15 mins.
