Serve this salad as a light lunch or alongside a piece of chicken or fish for dinner. Light and refreshing with simple flavors, it's delicious. Apples add crunch and a touch of sweetness. Ingredients
- SALAD
- 2 cups romaine lettuce, torn
- 1 cup spinach, torn
- 1 - small pear or apple, diced
- 1 - celery stalk, sliced
- 2 tablespoons dried blueberries, cranberries, or raisins
- 2 tablespoons chopped walnuts or favorite nuts
- 1 tablespoon mixed seeds (I use raw pumpkin seeds and raw sunflower seeds)
- SIMPLE WALNUT OIL VINAIGRETTE
- 2 tablespoons walnut oil, grapeseed, or olive oil
- 2 teaspoons lemon juice or apple cider vinegar
- 2 teaspoons chopped fresh parsley
- - salt and coarse ground black pepper, to taste

Step 1To make the salad, combine all ingredients and toss.
