Good for you and endlessly adaptable! I love having a salad like this for lunch... it's satisfying all on its own.

Blue Ribbon Recipe

Serve this salad as a light lunch or alongside a piece of chicken or fish for dinner. Light and refreshing with simple flavors, it's delicious. Apples add crunch and a touch of sweetness. We loved the nuts throughout. The simple dressing has a slight tang and lets the salad flavors shine. Make this salad your own by adjusting with your favorite nuts or dried fruit.

Ingredients

  • SALAD
  • 2 cups romaine lettuce, torn
  • 1 cup spinach, torn
  • 1 - small pear or apple, diced
  • 1 - celery stalk, sliced
  • 2 tablespoons dried blueberries, cranberries, or raisins
  • 2 tablespoons chopped walnuts or favorite nuts
  • 1 tablespoon mixed seeds (I use raw pumpkin seeds and raw sunflower seeds)
  • SIMPLE WALNUT OIL VINAIGRETTE
  • 2 tablespoons walnut oil, grapeseed, or olive oil
  • 2 teaspoons lemon juice or apple cider vinegar
  • 2 teaspoons chopped fresh parsley
  • - salt and coarse ground black pepper, to taste

How To Make fruit, nut, and seed salad

  • Salad ingredients tossed in a bowl.
    Step 1
    To make the salad, combine all ingredients and toss.
  • Whisking together vinaigrette ingredients.
    Step 2
    To make the vinaigrette, whisk or shake all the ingredients vigorously.
  • Drizzling dressing over the salad.
    Step 3
    Drizzle the salad with the dressing. Enjoy!
