fancy green beans
This is my own creation and I first made this in 1960, when I lived in Grand Rapids,Mi. Everyone loved it and asked for it often. The lemon juice gives this dish just the right amount of tart with the sweet. I have made it with apricots too! These are my own photos.

Ingredients
- 6 slices bacon,fried crisp and chopped
- 2 cans (14 oz. each) cut green beans, drained and rinsed
- 15 ounces can pears, drain and reserve juice in measuring cup
- 1/2 cup pear liquid,or whatever you drained into measuring cup
- 1/2 cup water or whatever is needed to make pear juice equal 1 cup
- 2 tablespoons granulated sugar
- 1 large lemon juice, fresh; plus the zest
- 1 pinch nutmeg
- 2 tablespoons cornstarch
- 1 tablespoon bacon grease,optional
- to taste: - salt and pepper,optional
How To Make fancy green beans

Step 1Fry bacon crisp, cool then chop up;set aside. Drain green beans in strainer and rinse;set aside. Drain juice from pears into measuring cup adding the water to make 1 cup liquid,pour into saucepan.

Step 2Add the sugar,nutmeg, lemon juice and all but 1 teaspoon of the zest. Stir in and blend in the cornstarch. Bring to a boil ,stirring continuously until mixture becomes clear. Stir in all but 1 Tablespoon of the bacon pieces.

Step 3Cut up pears. and zest from lemon.

Step 4Add drained beans and fold in the pears. Just heat until warmed. Pour into serving bowl and garnish top with reserved bacon and orange zest. Drizzle 1 Tablespoon of bacon grease over top if desired. Enjoy! Enjoy.
