easy riesling asparagus & onions

"Eat your vegetables" is not something I have to tell my children! They absolutely Love them.... well most of them! I am fortunate enough to say they even love Asparagus. I used to be intimidated by this wonderful vegetable. That is until I met my husband and he taught me just how easy it is to prepare. This is my husband's recipe, & my favorite way to enjoy Asparagus. We use a Riesling wine, but have used white wine, and it works just as well. You want something that is on the sweet side. Top with grilled onions, and viola! A delicious vegetable that goes well with any main dish!

Ingredients For easy riesling asparagus & onions

  • 1 lb
    asparagus, fresh
  • 1 c
    your favorite riesling, or white wine
  • 2 Tbsp
    butter
  • 1 clove
    garlic, finely minced
  • sea salt to taste
  • fresh cracked pepper to taste
  • GRILLED ONIONS (OR FRIED)
  • 2 Tbsp
    butter
  • 1-2 lg
    onions, vidalia, sliced

How To Make easy riesling asparagus & onions

    To prepare onions: In a small skillet, melt 2 tablespoons of butter, add sliced onions, and cook until browned. We like them a little crisp, cook time about 2-3 minutes. Set aside

    Prepare Asparagus: Cut off bottom 1-1.5 inch of asparagus. A good way to tell how much to take off is to hold one piece of asparagus at each end & bend until end snaps off. That is where you want to cut the remainder of your asparagus. The ends are tough, and cooking them until done will make the tops soggy.

    Add one cup of Riesling (or white wine), butter, & minced garlic to large skillet and bring to a rolling boil. Add asparagus & salt & pepper, and bring back to a boil. Once boiling, Cover & Remove from heat and let stand in skillet for 5 minutes. Serve topped with grilled onions! Easy Peasy!
