seasoned bread crumbs (with Pecorino Romano cheese)
Panko bread crumbs
olive oil spray
How To Make crispy air fryer zucchini chips
Slice zucchini into slices, about 1/4-inch thick each. Sprinkle salt on top and bottom. This helps draw out the moisture. Let slices sit about 15 minutes.
Blot the moisture with a paper towel.
In a bowl, whisk the eggs.
In another bowl, mix the Panko and bread crumbs together.
Dip the zucchini slices into the egg and then the bread crumb mixture.
In a single layer, place the zucchini slices in the air fryer basket. Spray with olive oil.
Fry at 390 degrees for a total of 8 minutes. Flip the slices after 4 minutes. Spray the other side with more olive oil. Continue cooking for the remaining 4 minutes.
