When the garden is overflowing with zucchini, give this zucchini chips recipe a try. Cooking them in the air fryer makes the chips crispy with very little oil. Panko gives them a crunchy texture, while the seasoned bread crumbs add a hint of Pecorino Romano cheese flavor. Enjoy by themselves or with your favorite dipping sauce. These air fried zucchini chips are a great alternative to fried potato chips.

Ingredients

  • 2
    zucchini, medium
  • 2
    eggs, beaten
  • 1/2 c
    seasoned bread crumbs (with Pecorino Romano cheese)
  • 1/2 c
    Panko bread crumbs
  • ·
    salt
  • ·
    olive oil spray

How to Make Crispy Air Fryer Zucchini Chips

Step-by-Step

  1. Slice zucchini into slices, about 1/4-inch thick each. Sprinkle salt on top and bottom. This helps draw out the moisture. Let slices sit about 15 minutes.
  2. Blot the moisture with a paper towel.
  3. In a bowl, whisk the eggs.
  4. In another bowl, mix the Panko and bread crumbs together.
  5. Dip the zucchini slices into the egg and then the bread crumb mixture.
  6. In a single layer, place the zucchini slices in the air fryer basket. Spray with olive oil.
  7. Fry at 390 degrees for a total of 8 minutes. Flip the slices after 4 minutes. Spray the other side with more olive oil. Continue cooking for the remaining 4 minutes.
  8. Enjoy!
