crispy air fryer zucchini chips
When the garden is overflowing with zucchini, give this zucchini chips recipe a try. Cooking them in the air fryer makes the chips crispy with very little oil. Panko gives them a crunchy texture, while the seasoned bread crumbs add a hint of Pecorino Romano cheese flavor. Enjoy by themselves or with your favorite dipping sauce. These air fried zucchini chips are a great alternative to fried potato chips.

Ingredients
- 2 zucchini, medium
- 2 eggs, beaten
- 1/2 cup seasoned bread crumbs (with Pecorino Romano cheese)
- 1/2 cup Panko bread crumbs
- salt
- olive oil spray
How To Make crispy air fryer zucchini chips

Step 1Slice zucchini into slices, about 1/4-inch thick each. Sprinkle salt on top and bottom. This helps draw out the moisture. Let slices sit about 15 minutes.

Step 2Blot the moisture with a paper towel.

Step 3In a bowl, whisk the eggs.

Step 4In another bowl, mix the Panko and bread crumbs together.

Step 5Dip the zucchini slices into the egg and then the bread crumb mixture.

Step 6In a single layer, place the zucchini slices in the air fryer basket. Spray with olive oil.
