Ingredients
- 2 pounds cabbage
- 2 cups low-sodium chicken broth
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 small green or red chili pepper, diced
- 3 medium carrots, cut in ribbons or julienned
- apple cider vinegar, optional
How To Make confetti cabbage

Step 1Wash cabbage. Slice very thinly so that it will cook evenly.

Step 2In a large pan, add chicken broth, garlic, and onions. Bring to a boil (about 2 - 3 minutes). Then add cabbage, peppers, and carrots.

Step 3Salt and pepper to taste.

Step 4Place the lid on the pot and let it simmer for 5 - 10 minutes or until tender.

Step 5At this point, I cut the burner off and cover to finish the cooking process. Serve with a little apple cider vinegar, if desired.
