Onions and peppers add tons of flavor to this cabbage side dish. Seasoned simply with salt and pepper enhances the natural flavors of the dish. The hint of apple cider vinegar adds a little acidity that balances the flavors, too. Bell peppers and carrots add a fun punch of color to the cabbage. Prepared in s snap, this is a very easy way to prepare cabbage.

Ingredients

  • 2 pounds cabbage
  • 2 cups low-sodium chicken broth
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 small green or red chili pepper, diced
  • 3 medium carrots, cut in ribbons or julienned
