Ingredients
- 2 - limes, juiced
- 1/4 can red onion, minced
- 1/4 teaspoon sea salt
- 2 tablespoons vegetarian mayo - or eevo - (non-vegetarians can just use mayonnaise that has olive oil in it) for decreased fat content
- 1 - avocado - chopped
- 1 - 15 oz cans no salt added kidney beans, drained & rinsed
- 2 - red peppers - sliced into strips
- - fresh cracked black pepper (to taste)
- 6 cups chopped romaine
How To Make chopped salad with avocado

Step 1In a large bowl, whisk together the lime juice, red onion, salt, and mayuonaise (or EVOO)

Step 2Add the avocados, beans, and peppers (any color - red - green - yellow). Season generously with black pepper. Toss gently to combine

Step 3Arrange the romaine on flour plates and spoon the dressed avocado, beans, and peppers on top.

Step 4Serves 4 as a side salad.
