Ingredients
- 8 cups cauliflower florets (1 large head)
- 1 - red onion, cut into 1/4-inch-thick slices
- - juice from 1 large lemon
- 2 tablespoons olive oil
- 1/4 teaspoon black pepper
- 1/4 cup sour cream
- 1-1/2 cup finely shredded triple cheddar cheese

Step 1Combine the first five ingredients and spread onto a foil-covered, rimmed baking dish.

Step 2Bake in a preheated 450º oven for 40 minutes, stirring after 20 minutes.

Step 3Add sour cream to vegetable mixture; mix well. Top with cheese; bake 5 minutes or until melted.
