Ingredients

  • 6 large leeks, trimmed and washed
  • - olive oil
  • 2 tablespoons butter
  • 5 sprigs thyme, leaves picked
  • 2 cloves garlic
  • ½ cup half and half
  • 4 ounces grated cheddar cheese
  • 2 ounces parmesan cheese, grated
  • 4 ounces brie cheese, diced

How To Make cheesy leeks

  • Step 1
    Wash leeks thoroughly and then slice them diagonally, about ½-inch thick. Set aside.
  • Step 2
    In a large skillet, heat a drizzle of oil, the butter, thyme and garlic over medium heat. As mixture begins to bubble, add leeks and simmer uncovered for about 35 minutes.
  • Step 3
    Add salt and pepper to taste. Transfer mixture into a baking dish. Stir in the cream and a splash of water. Sprinkle the cheddar and parmesan on top and then add the cubed brie on top of all.
  • Step 4
    Place in a preheated 350º oven for 20 minutes or until golden and cheese is melted.
