Ingredients
- 6 large leeks, trimmed and washed
- - olive oil
- 2 tablespoons butter
- 5 sprigs thyme, leaves picked
- 2 cloves garlic
- ½ cup half and half
- 4 ounces grated cheddar cheese
- 2 ounces parmesan cheese, grated
- 4 ounces brie cheese, diced
How To Make cheesy leeks

Step 1Wash leeks thoroughly and then slice them diagonally, about ½-inch thick. Set aside.

Step 2In a large skillet, heat a drizzle of oil, the butter, thyme and garlic over medium heat. As mixture begins to bubble, add leeks and simmer uncovered for about 35 minutes.

Step 3Add salt and pepper to taste. Transfer mixture into a baking dish. Stir in the cream and a splash of water. Sprinkle the cheddar and parmesan on top and then add the cubed brie on top of all.

Step 4Place in a preheated 350º oven for 20 minutes or until golden and cheese is melted.
