A low carb side dish with corn salsa, or for breakfast with an egg on top. I dare you to tell me you miss the flour in this recipe. You really can't tell it's made from cauliflower. Very easy to make.

- 2 cups grated fresh cauliflower
- 2 cups shredded 3 cheese blend
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon paprika, sweet mild
- 1/4 teaspoon cornstarch
- 2 - eggs
- - salt to taste
How To Make cauliflower waffles

Step 1Grate cauliflower into large bowl

Step 2Add cheeses, eggs, paprika, and corn starch

Step 3Mix together, add salt to taste

Step 4Spray waffle iron with cooking spray and pre heat, Spoon into waffle iron, close lid and cook for 6 min. great with fresh fire roasted corn salsa as a side dish
