Makes 8 fritters
Ingredients
- 1/2 large head cauliflower
- 1 medium carrot, grated
- 2 - eggs
- 1/4 cup flaxseed meal
- 1/4 cup raw, unsalted sunflower seeds
- 1/4 cup hazelnuts, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon lime juice
- 1/2 teaspoon salt
- 1 tablespoon poppy seeds
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme
- 1.2 teaspoons ground cinnamon
- 1/4 teaspoon smoked paprika
- pinch cayenne pepper
How To Make cauliflower fritters

Step 1Cut the cauliflower into small florets and place in the bowl of your food processor. Process on pulse until cauliflower has the texture of large grains of cracked wheat. Transfer to a large mixing bowl.

Step 2Add all the rest of the ingredients and mix until well combined.

Step 3In a large skillet, heat a splash of olive oil and carefully drop about 1/4 of a cup of mixture for each fritter.

Step 4Cook three or four fritters at a time for 2-3 minutes on each side, until golden brown, then keep warm while you cook the rest.
