My Grandma used to make this jell-o mold very often. None where the same but all where delicious.

Serves 4 to 6
Ingredients
- 1/2 teaspoon salt
- 1 1/2 cups boiling water
- 1 cup large curd cottage cheese
- 1 tablespoon lemon juice
- 1 cup coarsely grated carrots
- 1/2 cup chopped pecans
- 1 package jell-o orange or lime
How To Make carrot cottage cheese mold by eddie

Step 1Dissolve jell-o gelatin and salt in boiling water.

Step 2Add cottage cheese and lemon juice chill until very thick.

Step 3Fold in grated carrots and pecans.

Step 4Pour into 1 quart mold chill until firm unmold.

Step 5Garnish with additional cottage cheese if desired.

Step 6Makes about 3 cups.
