broccoli spoon bread
I've had this recipe for quite awhile- don't remember where I got it- I think it was at a family potluck or something like that- All I know is- there wasn't any left by the time I went back for seconds! lol

Ingredients
- 2 cups milk
- 1/2 cup cream of rice hot cereal, uncooked
- 10 ounces pkg. thawed chopped broccoli
- 1 cup cheddar cheese, shredded
- 4 medium eggs, lightly beaten
- 2 tablespoons butter or margarine
- 1 clove garlic, minced
- 2 teaspoons dried basil leaves
- 2 teaspoons baking powder
How To Make broccoli spoon bread

Step 1Preheat oven to 375^. Bring milk just to boil in medium saucepan on medium-high heat. Reduce heat to medium. Gradually add cereal, stirring constantly, to avoid lumps-( this is very similar to cream of wheat- which you could use if you wish). Cook and stir 30 seconds. Remove from heat. Cover with lid or wax paper and let stand 5 minutes. Add remaining ingredients; mix well. Pour into a greased or sprayed 1 1/2 quart baking dish. Bake 30-40 minutes, or until golden brown.

Step 2Note: other thawed vegetables may be used instead- like cut green beans, mixed vegetables or cauliflower.
