breaded tomatoes

Baked Tomatoes and toasted buttered bread cubes in a casserole. My mom used to make this when I was a kid. Of course I was never much of a fan but I love them now.

Ingredients

  • 1 cup clery, small dice
  • 1/2 cup onion, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 slices bread, toasted, buttered and cut in 1/2" cubes
  • 1 15 ounces can tomatoes, broken up (i use canned stewed tomatoes)
  • 1 tablespoon sugar, (can use splenda)
  • 1 teaspoon salt
  • couple dash pepper

How To Make breaded tomatoes

  • Step 1
    Saute celery and onion in butter until tender. Blend in flour, add tomatoes, sugar, salt and pepper, along with half of bread cubes. Pour into 1 1/2 quart casserole. Top with remaining bread cubes. Bake at 350 degrees F. for 50 minutes.
