  • 3 large lemons, cut in half
  • 3/4 cup blue cheese
  • 1/4 cup cream, heavy or lite
  • 2 teaspoons fresh thyme leaves, choppd
  • 2 tablespoons fresh parsley, choppd
  • 1 large clove garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 tablespoons bread crumbs
  • 2 tablespoons olive oil

  • Step 1
    BRING A LARGE POT OF WATER TO A BOIL. TRIM ARTICHOKES TRIM OFF 1" OFF TOP N CUT BOTTOM OFF TO MAKE FLAT N WITH KITCHEN SHEARS (OR SCISSORS) SNIP OFF POINTS N RIP OFF A FEW OUTER TOUGH LEAVES.

    ADD ARTICHOKES TO BOILING WATER ALONG WITH THE JUICE SQUEEZED FROM LEMONS ...N TOSS HALVD LEMONS IN WATER N COOK FOR 30 MINUTES OR UNTIL TENDER. DRAIN ARTICHOKES N COOL

    IN A SMALL BOWL STIR BLUE CHEESE, CREAM, THYME, 2 TSP. OF PARSLEY, GARLIC, S & P. IN ANOTHER SMALL BOWL COMBINE BREAD CRUMBS N REMAINN PARSLEY.

    PREHEAT OVEN TO 400 REMOVE CENTER CHOKE WITH A SMALL SPOON (GRAPEFRUIT SPOON WORKS GREAT) STUFF CHEESE MIXTURE INTO CENTER OF ARTICHOKES N PUT IN BAKING DISH. SPRINKLE BREAD CRUMB MIXTURE OVER ARTICHOKES N DRIZZLE W/OLIVE OIL. BAKE FOR 20 MINUTES....ENJOY :)
