betty's bbq and bacon succotash

I'm saving this recipe here as I know when I need it again I'll have lost the snippet of paper I was given. Among my friends I'm know as the cooking friend. This is a saccotash drizzled with your favourite BBQ and peppered with nuggets of bacon. I am yet to make this, but rest assure it will be on my "to try" list.

Ingredients

  • - 1/2 a red onion, diced
  • - 1 cup diced pepper (capsicum) red or green
  • - 1 x 14 ounce (425g) tin black beans, drained and well rinsed
  • - 2 cups frozen corn
  • - 6 strips of bacon - cut thick if possible
  • - 1/4 cup your favourite smoky bbq sauce
  • - 2 tablespoon chopped fresh chives
  • - 2 tablespoons chopped parsley
  • - salt and pepper to taste

How To Make betty's bbq and bacon succotash

  • Step 1
    Chop the bacon into even pieces. Heat the skillet and fry until it's to your liking. Remove the bacon and keep any drippings remaining in the pan.
  • Step 2
    In your pan fry the onions and peppers for 3-5 minutes in the bacon grease/drippings.
  • Step 3
    Add the black beans and corn and stir well. Cook long enough that the corn heats through all the way.
  • Step 4
    Add the remaining ingredients while the heat is on, stir everything through and remove from the heat. Serve.
