Ingredients
- 4 - good-sized beets
- 4 tablespoons flour
- 3 tablespoons cream
- 2 - eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
- - extra virgin olive oil to lubricate pan
How To Make beet fritters

Step 1Boil beets until tender, rub off skin, and mash to a smooth pulp

Step 2Blend flour, cream, eggs, salt, and pepper. Mix in beets.

Step 3Cook like pancakes on a hot greased pan. Serve.
