asparagus and carrot crepes
This was the first crepe recipe I ever made. I found this recipe over 30 years ago and thought it sounded good and gave it a try. It was and instant success, my family loved it.

Ingredients
- 3 - carrots, grated
- 2 tablespoons butter
- 10-12 ounces steamed asparagus
- - salt and pepper to taste
- 6 - crepes
- - fresh grated swiss cheese
- - yogurt or sour cream for serving
How To Make asparagus and carrot crepes

Step 1Saute the carrots in the butter.

Step 2When carrots are done add the asparagus and cook until hot. Season with salt and pepper.

Step 3Fill each crepe with the asparagus carrot mixture, roll up and put seam side down on a greased baking sheet.

Step 4Top with Swiss cheese and put under a broiler until cheese is melted and bubbly.

Step 5Remove from broiler and serve with a dollop of sour cream or yogurt.
