Asparagus and Carrot Crepes

10-12 ozsteamed asparagus
·salt and pepper to taste
·fresh grated swiss cheese
·yogurt or sour cream for serving
How to Make Asparagus and Carrot Crepes
- Saute the carrots in the butter.
- When carrots are done add the asparagus and cook until hot. Season with salt and pepper.
- Fill each crepe with the asparagus carrot mixture, roll up and put seam side down on a greased baking sheet.
- Top with Swiss cheese and put under a broiler until cheese is melted and bubbly.
