air fried squash
My Mom makes amazing fried squash but as I get older I try to find reduced fat alternatives to some of my old favorites. These fit the bill and are absolutely delicious.

Ingredients
- 2 medium to large yellow squash
- 1 cup corn meal
- 1 cup italian style or plain bread crumbs
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 eggs
- 2 tablespoons milk
- canola oil for drizzling/brushing
How To Make air fried squash

Step 1Mix together cornmeal, bread crumbs, salt and seasonings in a bowl.

Step 2In a separate bowl, beat together eggs and milk.

Step 3Wash yellow squash. (Do not peel) Slice into thin circles.

Step 4Preheat air fryer to 400 degrees.

Step 5Pour a bit of canola oil into a bowl. Use some of the oil to brush the bottom part of basket using a barbecue brush.

Step 6Dip each squash circle in egg and roll in breadcrumb mixture. (You will have to work in batches)

Step 7Lay breaded squash in air fryer basket. Do not crowd, overlap or or stack.

Step 8Use the brush to gently dab a bit of oil over the tops of the squash. It doesn't take much.

Step 9Air fry at 400 degrees for 6 minutes.

Step 10Flip squash and air fry for another 6 minutes.

Step 11Place cooked squash on a wire rack over a pan and place in warm oven while you finish batches.

Step 12These serve up hot and crispy!
