I created this from an abundance of veggies. Super easy and you can add or subtract whatever veggies you have handy.

Ingredients
- 2 tablespoons olive oil
- 1/2 - red onion
- 1 cup green beans, fresh
- 1 - carrot, sliced
- 2 cloves garlic
- 1 tablespoon oregano, dried
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4 ounces mushrooms, fresh
- 1 - yellow squash
- 1 - zucchini
How To Make veggie bounty

Step 1You can really add ANY veggies you have handy in whatever quantity you like. These are what I had handy.

Step 2Heat the olive oil in a frying pan. Add the firmer veggies first like the carrots, green beans, potatoes, broccoli or cauliflower- as they will take longer to cook.

Step 3Add crushed garlic, salt and pepper and whatever herbs you like. I had fresh dried oregano handy.

Step 4When the firmer veggies start to become tender, add the mushrooms, zucchini, squash and any other soft veggie you choose to use.

Step 5Let cook with the lid on to steam a bit. Stir occasionally and cook until tender.
