  • 2 c
    heavy cream
  • 1 1/2 Tbsp
    butter, unsalted
  • 1 Tbsp
    minced shallots
  • 1/2 c
    parmigiano-reggiano, grated
  • 1/2 c
    finely chopped basil leaves
  • ·
    dash of hot sauce or two
  • 2 c
    cooked peas

How to Make super creamy peas


  1. Bring the cream to a boil in a saucepan. then lower it to a simmer and let it reduce slightly 3 or 4 minutes.
  2. Melt the butter in a small skillet, and cook the shallots over med-low heat until translucent, 3 minutes.
  3. Add the cooked shallots and the cheese to the cream, and cook until lightly thickened, 3 minutes. Add the basil, hot sauce, and peas, heat through and serve immediately.
