Ingredients
- 2 cups herb-seasoned stuffing mix
- 1/2 cup herb-seasoned stuffing mix
- 1 tablespoon melted butter
- 1 pound lean ground beef or ground turkey
- 1 - onion, chopped
- 1 - 14.5 oz can whole peeled tomatoes, cut up
- 1 - 8 oz can corn, drained
- 2 large green bell peppers, cut lengthwise into quarters
How To Make stuffed pepper casserole

Step 1Heat oven to 400. In bowl, stir together 1/4 cup stuffing mix and butter. In lg skillet, over medium-high heat, Cook beef and onion until beef is browned.

Step 2If using ground beef, drain any fat from skillet. Stir in tomatoes and corn. Stir in remaining stuffing mix. Arrange peppers, cut-side up in shallow casserole dish.

Step 3Spoon beef mix into peppers. Sprinkle the top w/ reserved stuffing mix. Cover, bake 25 mins. Uncover, bake 5 mis.
