I got this easy to make stuffed pepper recipe from my brother. I thought it tasted so good, and it's so easy to make!

Ingredients

herb-seasoned stuffing mix
1/2 c
herb-seasoned stuffing mix
1 Tbsp
melted butter
1 lb
lean ground beef or ground turkey
1
onion, chopped

14.5 oz can whole peeled tomatoes, cut up
1
8 oz can corn, drained
2 large
green bell peppers, cut lengthwise into quarters

How to Make Stuffed pepper casserole

Step-by-Step

  • 1Heat oven to 400. In bowl, stir together 1/4 cup stuffing mix and butter. In lg skillet, over medium-high heat, Cook beef and onion until beef is browned.
  • 2If using ground beef, drain any fat from skillet. Stir in tomatoes and corn. Stir in remaining stuffing mix. Arrange peppers, cut-side up in shallow casserole dish.
  • 3Spoon beef mix into peppers. Sprinkle the top w/ reserved stuffing mix. Cover, bake 25 mins. Uncover, bake 5 mis.
