I made this for dinner one evening when I just wanted something easy, different and a one dish meal. It turned out so tasty my husband said "you should put that on pinch". So I took a quick picture before he ate it all. It has a little spicy kick and could also be made with chicken, pork or beef or meatless for a great vegetarian main dish or an awesome side. Delish!
